Easy Kerala Food Recipe – Nithyavazhuthana Stir Fry
we have posted about the cultivation of clove beans aka nithyavazhuthana here. with clove beans we can make tasty stir fry aka mezhukkupuratti. ingredients are clove beans (Tender is good) , green chilies, small onion, turmeric powder, salt, cooking oil (coconut oil is ideal). Nithya in malayalam means daily, Clove bean growing throughout the year is possible, so it’s called as nithya vazhuthana. Ingredients for Clove beans stir fry
1, Nithya vazhuthana aka clove beans – 1/4 k.g, Tender is ideal for this recipe. clean and remove the white part (bulb), cut into 2 pieces.
2, Turmeric powder – 2-3 pinch
3, green chilly (2-3) or dried red chilly (2-3) , or you can use red chilly powder (1/4 tea spoon).
3, Shallots – 4/5 numbers, cut the same into small pieces, or you can use big onions, use half portion if Shallots not available.
4, Cooking oil – 2 tea spoon , coconut oil is ideal for all kerala recipes. you can also use any refined oil, if coconut oil is not available.
5, Salt to taste
cooking method
Heat coconut oil in a pan, put all the ingredients into the same and mix well. close the pan for 3-4 minutes, Stir it occasionally. Open the lid and put the same in low flame for another 2-3 minutes.
